From tacos to enchiladas, it’s hard not to love authentic Mexican dishes. We often enjoy having Tex-Mex cuisine, but nothing beats the authentic Mexican cuisine.
Whenever I visit my Grandma in Mexico, she feeds me incredible dishes. I always ask for her recipes, and she gives me them after quite a lot of pleading and begging. Then I come back home to Australia and I cook the same dishes following the same recipe, but the result is never the same.
For sure, my grandma’s touch is missing from the dishes, but there was something else that was also going wrong. The cheese I was using was not the best for Mexican dishes.
Mexican cuisines have staples like chili peppers, corn and cheese. If you don’t get these three things right, then you won’t get the authentic Mexican taste in your dishes.
In this lockdown, I got some time to try Mexican dishes with a variety of cheese, and some of the cheeses gave terrific results.
Asadero, Colby, Quesadilla are some of the best kinds of cheeses for preparing authentic Mexican dishes. Every Mexican cheese is unique and has its distinct flavour and texture, so it quite hard to cook Mexican cuisine with just one cheese.
Initially, I used one cheese at a time, and the result was not very good, some cheeses were bland, and some were too sharp. Then I thought of mixing multiple cheeses, and I did. It worked like a miracle.
After a few attempts, instead of buying multiple cheeses, I bought Mexican shredded cheese. Mexican shred blend is the combination of four best kinds of cheese – Natural cheddar, Asadero, Queso Quesadilla, and Monterey Jack.

Natural cheddar

Monterey Jack is a semi-hard and creamy cheese that has a sweet flavour. It blends with the sharpness of cheddar and tart flavour of Asadero really well. It also has incredible melting properties.
Queso Quesadilla
This cheese is similar to Monterey Jack; it is smooth and creamy and can replace any cheese.
